Chicken Fried Rice

 Ingredients:
2 Cups of cooked rice
1 egg
Half a green and red chilli chopped (if you like it really spicy, use a whole chilli)
1 Clove of Garlic
1 Small Onion
1 Chicken Breast or 1 Turkey Breast
1 cup of cooked prawns
2 big tbsp of curry power, i use extra hot as i like the kick
1 tsp Chilli Powder
4 tbsp soy sauce
1 Tbsp sesame oil
half cup of peas
1 tsp white Pepper
Salt
Veg of your choice, i used Spring Onions/Peppers and Carrots

Method
Cook the chicken in a pan using frylight as your oil.
In a wok, add alot of fry light and sesame oil.
Fry Garlic, onion, peas and veg of choice.
Fry for 2 minutes and then add the chilli.
Fry for a further 1 minute.
Add the cooked chicken and mix well. Add the rice and mix well.
Lower the heat slightly, this is key as you dont want to burn the rice, so on a conventional hob move from 6 - 4, do not over stir either as you dont want to make the rice turn mushy.
Add curry Powder, chilli powder, soy sauce and mix well.
Make a hole in the middle of the wok and spray with frylight.
Crack the egg into the hole and quickly scramble the mix into the rice. Add prawns and peppers.
And Serve.
