So today was my daughters 8th birthday - queue 20 8 year olds running around my house cause havoc as they go. So now as I sit down exhausted and in my PJ's with a glass of Diet Coke in hand, I thought I would share with you my OOTD. I went for a casual look, jeans and shoes are from Penny's/Primark. Jeans were €15 and the shoes were €5 and I bought them two weeks ago. The top I am wearing is from Only Clothing and it cost €20 and the necklace came with it Bargain.

It only takes one of two changes in your daily routine and once that is done you will start to see results. Change your cooking oil to a 1cal fry lite spray, take the fat off your meat, don't eat the skin on the chicken, add more fruit, vegetables and excercise in and you are off to a winning start! So today is the day, it is weigh day. How am I feeling about the last 7 days? I am actually feeling good, I hope to see the scales go down this week by a pound or more as i maintained last week. Last week was a bad week between Easter and the weather changing so i wasn't able to go out and walk as far as i wanted to in the rain with the buggy (Didn't want my little girl catching a cold). Weigh in is tonight so i am going to continue on the track i am on today and hopefully i will have some positive news later after class.
Ingredients
400g 2% or less mince meat
1 Pepper
1 Scallion
1 Carrot , peeled and grated
400g Jar of Passata
1 Tin of Tomatoes
1 Tbsp Mixed Herbs
3 Cloves of Garlic
(You can add onions and mushrooms if you desire, i dont like these so i have left them out)
Method
Brown mince in the pan first and then add all the ingredients into your slow cooker, cook on Low for 8 hours or on High for 4 hours
Serve
Serve with Spaghetti and some Mixed Herbs sprinkled on top, use your HEB for your cheese sprinkled on top, (i dont eat cheese so i have left this out)

2 Cups of cooked rice
1 egg
Half a green and red chilli chopped (if you like it really spicy, use a whole chilli)
1 Clove of Garlic
1 Small Onion
1 Chicken Breast or 1 Turkey Breast
1 cup of cooked prawns
2 big tbsp of curry power, i use extra hot as i like the kick
1 tsp Chilli Powder
4 tbsp soy sauce
1 Tbsp sesame oil
half cup of peas
1 tsp white Pepper
Salt
Veg of your choice, i used Spring Onions/Peppers and Carrots
Method
Cook the chicken in a pan using frylight as your oil.
In a wok, add alot of fry light and sesame oil.
Fry Garlic, onion, peas and veg of choice.
Fry for 2 minutes and then add the chilli.
Fry for a further 1 minute.
Add the cooked chicken and mix well. Add the rice and mix well.
Lower the heat slightly, this is key as you dont want to burn the rice, so on a conventional hob move from 6 - 4, do not over stir either as you dont want to make the rice turn mushy.
Add curry Powder, chilli powder, soy sauce and mix well.
Make a hole in the middle of the wok and spray with frylight.
Crack the egg into the hole and quickly scramble the mix into the rice. Add prawns and peppers.
And Serve.
Ingredients
2 Skinless Chicken breats chopped into strips
1 Red Pepper.1 Green Pepper/1 Yellow Pepper, desseeded and sliced
1 Garlic Clove
Cajun Seasoning 30g
Method
Place all ingredients in the slow cooker, place on low for 8 hours or high for 4 hours (much nicer on low for 8 hours)
Serve on a bed of lettuce
Ingredients,
3 Carrots, peeled and Slicked into cubes
2 Parsnips, peeled and Sliced into Cubes
2 Sweet Potatoes, peeled and sliced into cubes
2 Cloves of Garlic
1 lt of Vegetable Stock (500 mls if you prefer a thicker soup)
Salt and Pepper for seasoning
Method
Put all ingredients into a large pot and bring to the boil, then allow the soup to simmer until all ingredients are soft, then put into a blender to give it the smooth texture and removes all the lumps. Serve hot, or store in the fridge to be reheated later.
Food Prep is key to Success,
Fail to prepare, prepare to fail as the old saying goes.
With a three month old baby, it is key for me to prepare my breakfast and lunch in advance or changes are I will end up eating extremely unhealthy. So what have I prepared for the week ahead:
Breakfast
Fruit Medley - Grapefruit, Grapes, Raspberry, Melon, Strawberries and a yogurt, generally it is a Muller Light Yogurt
Lunch
Salad - Ham, peppers, scallions, lettuce, baby potatoes
Vegetable Soup - See my soup recipe i posted previously
Match that with a healthy dinner and you are on track to eating better, feeling better and if you are trying to lose weight it will kick start your weight loss.
Ingredients:
2 Sachets of Hartleys Sugar Free Jelly ( I am using Strawberry but you can use whatever flavor you like)
2 Sachets of Gelatine
1 Muller Light Yogurt, I am using Vanilla but again use what ever flavor you like.
Method
Add 1 Jelly sachet and 1 Gelatine sachet and 140 mls of Boiling Water and mix until is dissolved.
Fill up tray half way and place into the fridge for 10-15 minutes to set.
Make the same mixture again, but this time mix in the Muller Light Yogurt.
Pour onto the set jelly and put back into the fridge until it is fully set.
When fully set cut it up into pieces.
The whole lot is 3 Syns so enjoy your little treat.
Ingredients:
3 Eggs
50g Self Raising Flour
1 Curly Wurly
1 Sachet of options Chocolate Orange Highlights
2 TSP Cocoa
10g Sweetener
2 TSP Vanilla Extract
2 TBSPN of Water
Frylight or Fairy Cake Packets (16)
Method:
1. Spray baking tray with Frylight or place, the fairy cake packets into the trays, mix flour, highlights sachet, cocoa and sweetener, stir until mixed evenly.
2. Add Eggs, vanilla extract and water, mix well and pour into tray.
3. Break up curly wurly and sprinkle into mixture
4. Bake for 10 mins @ 180 degrees
5. Cut into 16 pieces once cooled down.
Serve with a spoonful of Muller Light Vanilla Yogurt.
Total Syns - Makes 16 portions @ 1 Syn Each.
